Chocolate Chia Pudding with Berries

This is one of my favorite recipes for a meal that requires minimal time and effort. It literally takes less than 5 minutes to throw together, and you can make either a single serving or scale it up to make more. It’s a great choice for meal prep as it will last well in the fridge for a few days. I enjoy this as breakfast, lunch or a snack usually. The key to this recipe being a balanced meal choice is that is has protein powder added. Otherwise, if you want to make it without protein powder, I would instead consider this a snack. But any way you eat it- the taste makes you feel like you’re actually eating desert!

This recipe features cacao powder from Karen Berrios. Cacao is a reasonably priced pantry staple I highly recommend having on hand. In just one small teaspoon, you get a significant amount of antioxidants, fiber, iron and magnesium- talk about nutrient-density! Cacao is not the same as cocoa powder you may be more familiar with. Cacao goes through less of a refining process during production, which is why it retains so many great nutrients. Karen Berrios also carries chia seeds, which is a great source of fiber, magnesium, and some omega-3 fats.

Ingredients to make 2 servings:

1/3 cup chia seeds
2 Tbsp cacao powder
Enough vanilla protein powder to get at least 20g protein per serving
3/4 cup milk of choice
1 Tbsp sweetener of choice
Handful of raspberries

Directions:
In a container, mix together all ingredients thoroughly. You can eat this right away, or leave it for 5-10 minutes to let it firm up. Serve with your berries!
