Egg Roll in a Bowl

Egg Roll in a Bowl Serves 4 Total Time: 25 minutes

Ingredients:
2 Tbsp sesame oil
1 onion, diced
3 cloves garlic, minced
1 inch knob of ginger, minced
Protein: 12oz tofu (pressed+drained) or 1lb lean ground beef
1/2 cabbage head or 1lb preshredded bag coleslaw mix
1/4 cup soy sauce
1 carrot, sliced thinly (omit if using coleslaw mix with carrot)
1 bunch green onions, sliced thinly
3 Tbsp sweet + sour sauce
1/3 cup roasted peanuts or cashews or pumpkin seeds

Directions:
1) In a large skillet, heat oil over medium-high heat. Add onion, garlic and ginger and cook for 5 minutes. Add garlic and protein. If using meat, cook through. If using tofu, cook for another 5 minutes.
2) Add cabbage/coleslaw and soy sauce, carrot and green onion. Sauté until the cabbage is tender, about another 5 minutes. Top with sauce and nuts/seeds/additional green onion.
*Serving ideas: rice, add sliced bell peppers or mushrooms, garnish with lime wedges and herbs like cilantro or basil
