This recipe can be made vegan by using a plant-based milk and maple syrup instead of honey.

Raspberry Lemon Oatmeal Muffins Makes 12-16 muffins Prep Time: 15 minutes Cook Time: 30 minutes

Ingredients:
2 1/2 cups rolled oats
1/4 cup chia seeds
1 1/2 cup milk
2 Tbsp lemon juice
1/3 cup pure honey or maple syrup
2 tbsp coconut oil, melted
2 tsp vanilla extract
2 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 cup frozen raspberries

Directions:
1) In a medium bowl, mix oats, seeds, cinnamon, baking powder and salt well.
2) Pour in milk, lemon juice, honey, oil and vanilla extract. Mix everything together well.
3) Cover bowl and refrigerate overnight, or at least 3 hours. Since this recipe does not have flour, the chia will need time to soak up liquid and bind everything together.
4) When ready to bake, preheat oven to 375F. Line or spray muffin tin. Fill with oat mix and press raspberries into each muffin. Bake for 30 minutes.
