6/28/22 Live Cooking Class
Super Green Edamame + Grain Bowl & Summer Strawberry Crumble

We will be cooking Super Green Edamame + Grain Bowl and Summer Strawberry Crumble. Simply gather your ingredients and tools, log into Instagram, click on the live video on either of our pages (or find it filed under live videos if you’re tuning in later) and cook with us! The recipes will make around 4 servings, and you can bump up the quantity of ingredients if you’d like to prep more for leftovers later!
Directions (note that if you want to make these at the same time, first preheat oven and get water boiling)
Bowl
1) In a medium saucepan, bring water to a boil on stovetop to cook your grain of choice.
2) While grain is cooking, cut cucumber into bite-size pieces or slices. Roughly chop basil and dill if using fresh. Slice avocado.
3) În medium bowl, whisk together zest and juice of 2 limes, 4 tsp brown sugar, 3 Tbsp oil. Put chopped produce in the bowl and mix together well so everything is coated evenly.
4) Microwave frozen edamame, or warm up defrosted edamame. Add to mixing bowl.
5) When grains are done cooking, add to mixing bowl. Portion out and top with your optional toppings.
Dessert
1) Preheat oven to 350F. Grease ramekins.
2) Hull and chop strawberries into quarters. Toss with balsamic vinegar in a mixing bowl.
3) In a food processor, add oats, flour, cinnamon, water, 1 Tbsp oil and 1/4 cup brown sugar. Process until you achieve a coarse crumb.
4) Divide strawberries evenly into ramekins. Top with crust and bake for about 20 minutes or until crust is golden brown. Serve with optional toppings.
